Although the singer puts a huge focus on her fitness regimen, her diet also plays a key role in her overall physique. Here are five of her favorite foods that work their way into her everyday routine and keep her looking fit as ever.

1. Tofu
According to an interview with Self, Underwood says she likes to make a tofu scramble for breakfast—complete with chopped bell peppers and onions—on a typical morning. She prepares the veggies ahead of time, leaves them in the fridge, and then just throws them all in the skillet with some coconut oil in the morning for a quick meal. She also likes to include tofu in her lunch, as she “loves a good sandwich” with vegetarian “meats” like Tofurky

2. Avocado
A “healthy fat” staple for the country singer, Underwood has a huge love for avocado and usually includes a fourth of the fruit on her lunchtime sandwich, which she makes with Ezekiel bread.

3. Roasted Veggies 
“For dinner, I’m always roasting vegetables like sweet potatoes or spaghetti squash—it’s easy to make, and you can make a lot of it,” Underwood told Self.

4. Cereal
Another of her breakfast favorites is cereal. In an interview with Cosmopolitan, Underwood said she prefers Kashi Go Lean or Heart to Heart, which she’s “always eaten without milk” and knows that it might sound weird. “I’ve always got cereal on me, like Kashi, because it’s healthy and my son likes it too, so if I just always have it in my purse then we’re always good. I have snacks on me all the time. I don’t ever want to be hungry, I hate being hungry,” Underwood told Self.

5. Pea Protein Bars
One of Underwood’s favorite snacks, especially when she’s on the go, is vegan protein bars like No Cow Bars. They’re made with organic brown rice, pea protein and natural sweeteners—no dairy

Other top foods on the star’s must-have list: fruit, oatmeal, veggie burgers, an English muffin with peanut butter, and brown rice. She also records her meals in the MyFitnessPal app—she’s kept a food journal for a long time—to track her diet choices, which is especially helpful when she’s on tour or on the go.
